Cappuccino Chocolate Chip Cupcakes

If you like coffee and chocolate then do I have a recipe for you: Cappuccino Chocolate Chip Cupcakes!

Back when we lived in Florida, these use to be some of my favorite cupcakes to make, but somehow between the move and everything, I forgot about them. Last night on the way home I was strategizing what I could make that called for chocolate chips. (yes, this is literally how I think, haha!)

I had made chocolate chip cookies earlier in the week, so was wanting to make something different now that they were gone. Years ago, I had typed up this recipe for my sister when I had gone to visit her and thankfully I still had the recipe on my computer!

Cappuccino Chocolate Chip Cupcakes

1/2 cup butter, softened

1-1/2 cups sugar

3 eggs

3/4 cup of brewed coffee with 1 T cream

1-3/4 cups flour

1-1/2 tsp baking powder

1/4 tsp salt

1-1/2 cup chocolate chips

Beat softened butter; gradually add sugar. Beat for about 3 minutes, or until light and fluffy. Add eggs. Combine flour, baking powder, and salt. Add coffee and flour mixture little by little to butter and sugar. Add chocolate chips.

Spoon batter into greased custard cups or muffin tins. Bake at 350 degrees for about 30-35 minutes.

To finish off your Cappuccino Chocolate Chip Cupcakes, top with whipped cream and chocolate syrup. Makes a delicious treat!

Suggestions and Tips

As you might can tell in the photo, I used paper liners on my cupcakes and did not grease them. I recommend greasing them.

Also, use a hand mixer to stir up the cupcakes, it will make them lighter and fluffier.

If you aren’t big on chocolate feel free to skip the chips. Alternatively, feel free to use mini chocolate chips to make the recipe completely to your liking!
